Our Finca Hoyo Frío is one of those coffees that coffee lovers love to share with friends and family to show them what sets specialty coffee apart from conventional commodity coffee. You don’t need to be a foodie or a sommelier to pick out the intense notes of peach and apricot in this coffee. It’s a rewarding coffee for anyone who usually struggles to identify individual flavours.

When I first opened the freshly delivered bag of green coffee, I immediately noticed its distinct peach aroma. After roasting, that impression became even more pronounced. The surprising part: Finca Hoyo Frío is a classically washed coffee. No natural process, no honey process, no anaerobic fermentation. A coffee that shows just how intensely fruity a washed Arabica can be.

And its variety comes with a special Colombian story of its own. Variedad Colombia was developed by the Cenicafé research centre to combine the quality and productivity of Caturra with a natural resistance to coffee leaf rust.

Finca Hoyo Frío is located in Curití, in Colombia’s Santander region, and is run by the Torres family. On the roughly ten-hectare farm, Félix Morantes works side by side with the pickers during harvest. His son, Félix Jr., later took a different path, setting up direct exports to secure better prices for his family’s coffee. In 2014, he shipped his first tonne of green coffee to Australia. Today, Hoyo Frío represents a family story that brings together traditional coffee farming and a direct connection to roasters.
