Coffee cherries naturally contain caffeine. Various methods are available to remove it from the beans. For our Decaf, decaffeination is carried out using ethyl acetate. This process is considered particularly gentle and utilizes an organic substance that specifically filters caffeine out of the bean. Since ethyl acetate is often derived from sugarcane, it is also referred to as the Sugarcane Process. This method is popular because it preserves the individual character and aroma of the coffee very well.
